Benjamin Paz is a visionary producer, roaster, and exporter who has shaped the specialty coffee landscape of Santa Barbara, Honduras. His farm, La Salsa, perched high in the mountains, produces award-winning Gesha, a reflection of both its Panamanian heritage and the distinct volcanic terroir of the region.
The Story
Nearly five years ago, we embarked on a journey to establish a sourcing program in Honduras. There was only one person we trusted to build something truly exceptional in a relatively undiscovered region: Benjamin Paz. A defining figure in the world of specialty coffee, Benjamin is not only a producer but also a roaster, exporter, and an essential bridge between the farmers of Santa Barbara and the global coffee community. Through his work at San Vicente, he has cultivated relationships with hundreds of producers, connecting them with roasters who share their commitment to excellence. Beyond his role as a facilitator, Benjamin is a remarkable coffee producer in his own right. His four farms are planted with rare and exotic varieties, but La Salsa—perched high in the mountains overlooking the lake holds the most accolades. The farm’s unique microclimate, shaped by a light wind sweeping through the valley, nurtures Gesha and SL28 trees, whose seeds trace back to the famed terroirs of Boquete, Panama. The result is an extraordinary cup profile that reflects both its Panamanian heritage and the distinct influence of Santa Barbara’s volcanic soil.
Benjamin’s approach to cultivation and processing has earned him international acclaim. Since founding La Salsa, he has sold coffee to premier roasters worldwide and achieved the remarkable feat of winning first place in the Cup of Excellence—twice. Sustainability and stewardship are woven into the fabric of La Salsa. A small but dedicated team works year-round to maintain the farm, managing conservation efforts, water runoff, and selective clearing to ensure a thriving ecosystem. During the harvest season, a larger team joins to hand-pick and meticulously process each lot, preserving the integrity of the coffee at every stage.
